-4 potatoes sliced into chips @albert_bartlett
1 tbsp of cornflour.
3 tbsp of plain flour.
½ tsp of salt.
Water to mix.
1 tsp of sesame seeds.
3 minced garlic cloves.
½ onion finely sliced.
½ green pepper finely sliced.
1 tsp of salt and sugar.
3 tsp of tomato ketchup.
2 tsp of sriracha sauce.
3 tsp of soy sauce.
2 tsp of honey.
2 tsp of cornflour mixed with some water.
-Wash and chop 3 potatoes into fries and steam them. Once cooled dust with some cornflour.
-Make the batter mix as per above, add some water until the lumps are removed for a gloopy batter.
-In two batches, start to coat the chips in batter.
-Cook until golden brown, they will stick together but you can break them up later. Keep to the side.
-For the sauce, in a hot wok, add some oil, 1 tsp of sesame seeds, this cooks fast,
-Add in minced garlic, give that a mix.
-Add onion, peppers, cook for a 1 minute.
-Add 3 tsp of sauce and sriracha, add more heat if you like.
-Add 3 tsp of soy sauce, 1 tsp of sugar and salt.
-Add some water to the sauce, add some cornflour and water mix to the sauce.
-Add some honey to balance the chilli.
-Add the chips. Give this a really good coat and mix.
